A recipe my grandma and step-mom always make in Ohio. It's simple, healthy but full of flavor thanks to the addition of bacon. It's best to use fresh green beans as they will keep the best texture after a long cooking time.

A recipe my grandma and step-mom always make in Ohio. It's simple, healthy but full of flavor thanks to the addition of bacon. It's best to use fresh green beans as they will keep the best texture after a long cooking time.

Cut or snap the little stems off the green beans and cut them into thirds. Cut larger potatoes in half, chop the onion and roughly chop the bacon.

Heat a little bit of oil in a pot and sauté the bacon on medium heat until it starts to brown, about 4-5 minutes.

Add the onion and cook until soft, about another 5 minutes.

Add beans and potatoes to the pot. Sprinkle in a little pepper and 1/2 tsp salt

Add enough water to just cover the vegetables. Bring to a boil. Lower the heat to a simmer and cover the pot. Simmer on low for about 1 hour.

Stir occasionally and add a little water if it gets too low. After 1 hour, the beans should be very tender. Add extra salt and pepper to taste.
