Ingredients

Serves 5 servings
  • 1/2 lbgrape leaves (about 225 grams)
  • For boiling:
  • Boiling water
  • Juice of 1/2 lemon
  • Pinchsalt
  • For the filling:
  • 2 cupsrice (about 400 grams)
  • 1/2 buncheach of:
  • dill
  • cilantro
  • parsley
  • 1 tablespoondried mint
  • 2 cupstomato juice (about 1/2 liter)
  • 1 tablespoontomato paste
  • 1 tablespoonsalt
  • 1/2 teaspooncumin
  • 1/2 teaspoonblack pepper
  • 1/2 teaspoonground coffee (for flavor)
  • 1hot chili pepper
  • 1large onion, finely chopped
  • 3 tablespoonsoil
  • Broth for cooking + juice of 1 lemon
  • For the bottom of the pot:
  • slicesTomato
  • slicesOnion
  • slicesBell pepper

Steps

  1. 1

    Blanch the grape leaves in boiling water with salt and lemon juice until they change color, then remove them from the water.

  2. 2

    Sauté the onion with the hot chili pepper until softened. Add the tomato paste, tomato juice, salt, black pepper, cumin, and coffee. Bring to a boil, then remove from heat.

    Add the washed rice, dried mint, and chopped herbs to the sauce and mix well.

  4. 4

    Stuff the grape leaves with the filling and arrange them in a pot over the tomato, onion, and bell pepper slices.

    Pour hot broth over the stuffed leaves, just enough to almost cover the top layer. Squeeze lemon juice over them, place a plate on top to keep them in place, bring to a boil, then reduce heat and simmer until cooked through.
