Heat butter and brown sugar on a low for a minute. Add peaches and cook on a low heat for 2-3 minutes. Set aside to cool until use.

Meanwhile add the rest of the ingredients to a separate pan on a low heat. Roast until it's done and resembles a crumble. The texture should be that of a crumbly mix.

For the serving suggestions, it can be served warm or cold. Add peach compote to an individual serving bowl. Top up with the crumble mix. And then finally with scoops of Vanilla ice-cream. Enjoy!
