Dal Rice Sweet Khichudi

In Odisha we are celebrating RAJA , a festival for three days every year on 14th - 16 the June each year. To celebrate today, I prepared yellow split moong daal and Basmati rice Khichudi with other ingredients.
This recipe is unique on its own. Prepared with ghee/ clarified butter roasted dry fruits, coconut, whole garam masala make the recipe delicious and awesome. I served this dish with Curd raita and ripe mango.
Dal Rice Sweet Khichudi

Arrange and assemble the required ingredients for the recipe. Soak the soya chunks after washing.

Roasted the moong daal on low flame till golden brown and aromatic. Set aside and allow to cool down.
Mix rice and daal, wash 2-3 times to ward off impurities. Soak them for 10 minutes.

Heat the 2 cups of water along with bay leaves and allow to boil. Add soaked rice and daal and start cooking on medium heat with soaked soya chunks.

Side by side roast cashews and raise with ghee on low flame. To the remaining ghee shallow fry the garam masala, coconut.

Then mix the cooked rice and daal, soya chunks, garam masala, coconut and sugar. Mix well and cook covered for 2 minutes on low flame. Garnish with cashews, raise, dried cranberries and serve with curd raita and ripe mango. Thanks
