Ingredients

Makes 11–12 balls
  • 2 sheetshanpen (Japanese fish cake)
  • 7 ozedamame in pods (about 2.8 oz/80 grams shelled)
  • 2–3 imitation crab sticks
  • 1 oz (30 grams)shredded pizza cheese
  • 2 tablespoonseach potato starch and mayonnaise
  • 1 tablespoonpotato starch (for coating)
  • 2 tablespoonsvegetable oil

Steps

    Boil the edamame, remove from pods, and place in a bowl. Cut the imitation crab sticks in half, shred by hand, and add to the bowl.

    Without opening the package, mash the hanpen until there are no large lumps.

    Add the mashed hanpen and the cheese, potato starch, and mayonnaise to the bowl. Mix everything together until well combined.

    Shape the mixture into balls of your preferred size and coat the surface with potato starch.

    Heat vegetable oil in a skillet. Add the balls and cook, turning occasionally, until golden and crispy on all sides.
