Preheat oven to 350F and grease and flour a loaf pan.

Crush pistachios to a fine crumb. Set aside 2 tablespoons coarsely chopped for garnishing.

In a large bowl beat the eggs together with sugar and olive oil until evenly combined, 2 minutes.

Stir in the buttermilk and almond extract.

Fold in the nuts, flour, and baking powder just until moistened and with no white streaks. Do not over mix this batter.

Pour into the prepared loaf pan.

Sprinkle the top with coarsely chopped pistachios.

Bake for around 55 minutes, checking the middle for doneness with a toothpick in the center.

Cool for 4 minutes and invert to cool or a wire rack.

Dust with powdered sugar if you prefer, slice to enjoy!
