Ingredients

1 serving
  1. 1 portiontortiglioni
  2. 1/2cucumber (chopped into small cubes)
  3. 1/2tomato (chopped into small cubes)
  4. 1/2 clovegarlic
  5. 300 ggreek yoghurt (strained)
  6. 2 tbsprice vinegar
  7. 2 tbspolive oil (plus more to serve)
  8. bunchdill (chopped, plus more to serve)
  9. pinchsalt
  10. pinchblack pepper (cracked, plus more to serve)

Steps

  1. 1

    Cook pasta as per packaging instructions.

  2. 2

    While waiting for pasta to cook, add yoghurt and rice vinegar into a bowl.

  3. 3

    Use a mortar and pestle to mash garlic along with olive oil. Then, add into the bowl with yoghurt.

  4. 4

    Add dill, then season with salt and black pepper and mix.

  5. 5

    Once pasta is cooked, drain then allow to cool a little. When cooled, add the yoghurt mixture, then add cucumber and tomato.

  6. 6

    Top with more dill, season with black pepper, drizzle with some more olive oil, and serve.
