You get home and realize you're out of bread, but you have plenty in the fridge to use up, including a zucchini. So, you start mixing, and just like that, dinner is saved! With just a few ingredients, you can enjoy something amazing. I used 100% Italian whole wheat flour (I'm lucky because I get everything I need straight from the mill).

Get your ingredients ready. Grate the zucchini into a bowl, squeeze out the excess liquid with your hands, and place it in a mixing bowl.

Add the flour, salt, olive oil, and water.

Add the baking powder and mix the dough first in the bowl, then transfer it to a floured surface. Shape it into a ball and cut it into four pieces.

Form each piece into a ball and flatten with your hands, using a little flour if needed. Place each piadina in the skillet.

Cook for 3 minutes on each side. Stack them on a plate so they stay soft. Prepare your fillings—I used cooked ham, mortadella,

Mozzarella, roasted bell peppers cooked with olive oil, garlic, and salt.

Fill the piadine with your favorite ingredients—I used mortadella, but feel free to get creative!

Fold in half and enjoy—they're light and super delicious!
