Ingredients

2 people
  1. 1x onion finely chopped
  2. 1-2garlic cloves crushed
  3. 25 gsalted butter
  4. 1 tbspCajun spice
  5. 2 tbspplain flour
  6. 200 mlmilk
  7. 300 mlchicken/vegetable stock
  8. 4x fresh or dried lasagne sheets
  9. 100 ggrated cheddar
  10. 50 gfrozen peas
  11. 100 gfresh spinach

Steps

  1. 1

    Fry your onion and garlic in olive oil until softened.
    Add in your chicken mince, fully cook breaking up with a wooden spoon. Either remove from pan and set aside or use a separate pan for the sauce.

    Add the butter, flour and Cajun spice to the pan and cook until combined about 3-4 minutes, using a whisk gradually add the milk and whisk until smooth.

    Once your sauce is smooth, add in your stock and continue whisking until fully combined.

  4. 4

    Add the sauce to the chicken mince, cut or break each lasagne sheet into 3 pieces and place in pan, stirring all the time to keep them from sticking together as much as possible. Cook until the lasagne is done this will take longer if using dried sheets.

  5. 5

    Add your peas, cheese and spinach and cook for about 3 minutes more until your peas or cooked. Season and serve.
