In a large bowl, add the warm milk, yeast, and sugar. Stir well and let the yeast activate for 10 minutes.

Once the yeast is activated, add the salt, then the baking powder and yogurt.

Mix everything together well.

Add the flour in three parts, mixing after each addition.

Add more flour and mix again.

Add the last portion of flour.

Add the oil last. Add it gradually, mixing each time until the dough absorbs it before adding more.

Knead the dough until it becomes soft and slightly sticky. Let it rise for 30 minutes.

In a food processor, blend the onions, hot peppers, red pepper, and spices. Add this mixture to the ground beef and mix well. The filling is now ready.

On an oiled surface, divide the dough into balls (you should get about 8 medium pieces). Flatten each ball and place the meat filling in the center.

Add mozzarella cheese. You can also add grated beef fat if you like for extra flavor, or any other toppings you prefer.

Fold the sides over and press the edges to seal. Brush the tops with ghee or clarified butter. You can sprinkle black seeds, cheese, vegetables, or leave them plain.

Place on a greased baking sheet. Bake in a preheated oven. Start by broiling the tops for 2–3 minutes, then turn off the broiler and bake at 350°F (180°C) on the middle rack for 10–15 minutes, until the bottoms are golden brown. Serve hot.
