Matar Ragda -
Soak white matar overnight in water. Cook in pressure cooker till 8 whistles. Take a kadai. Add oil, hing, saute onion, and tomato. Add 1 boiled potato, mash it. Add salt, red chilli powder, turmeric powder, jeera coriander powder, pavbhaji masala, red chutney, and tamarind jaggery chutney. Mix well. Add boiled white matar along with water as required. Mix well. Boil for a couple of minutes. Sprinkle chopped coriander. White Matar Ragda is ready to serve. - 2
Aloo Patties -
Take a bowl, add boiled potatoes, and mash it. Add salt, lemon juice, sugar, hing, turmeric powder, red chilli powder, pavbhaji masala, ginger chilli paste. Mix well. Make equal size of balls. Press each balls and give a round shape of patties. Coat in corn flour. Heat a tawa, apply oil, shallow fry all patties on both sides till turns crispy and golden yellow colour. Patties are ready to serve. - 3
Take a serving plate. Add Ragda, arrange aloo tikkis. Pour red garlic chutney, green chilli chutney, and tamarind jaggery chutney on it. Put some chopped onions and tomatoes. Sprinkle sev and pomegranate seeds and chopped coriander. Dizzle a few drops of lemon juice.
