Suran Bhajiya & Spicy Peanut - Coriander Yoghurt Dip (Vrat Special)

Full Fat Yoghurt : Curd , Yoghurt or dahi is an everyday Indian food . Sometimes we use it to make raitas , curd rice or add in recipes for fermentation or just have it plain . Yoghurt has many health benefits. Besides being pro - biotic ,it has several nutrients that are vital in maintaining bone density level . Researchers have found that having daily 3 servings of diary products , like yoghurt may help prevent Oestoporosis. Yoghurt is high in calcium, protein, vitamins & being pro- biotic can boost immune system.
During fasting / vrat these Bhajiyas can be served as a snack or light dinner with a glass of lassi .

Assemble all the ingredients. Grate Suran in water, so it will not tarnish.Grind Sanwa / Sama to fine powder.Take Rajgira Flour in a bowl.

Combine all the ingredients in a big bowl. Add fresh full - fat Yoghurt & mix. The batter should be thick. Do not add any water now. Rest the batter covered for 30 minutes. After the resting period,check the consistency of the batter. Add 1/4 cup water & mix. (Rajgira flour tends to soak up the batter & make it dry.)

Heat oil in a pan.Drop spoonfuls of batter in the hot oil. Now make the flame slow & fry the bhajiyas till golden.Remove them on kitchen paper.

Spicy Peanut - coriander Dip : Combine all the ingredients in a small mixer jar (except yoghurt)) & grind to a fine, smooth paste. Take it in a bowl. Add thick full - fat Yoghurt & mix. Serve with any Farali Farsan of your choice. Here I have served it with Suran Bhajiyas.

Note : Spicy Peanut - Coriander Dip has full- fat Yoghurt to balance the spices in it. You can avoid adding Yoghurt if you wish & enjoy the spicy taste of the dip as it is.

Note : Addition of full- fat Yoghurt in the Bhajiya Batter will make the bhajiyas soft.
Also you can serve a chilled glass of sweet Lassi (as I have done) to beat the heat & have a filling effect.
