Ingredients

  1. 4boneless skinless chicken breasts
  2. 1 tbspolive oil
  3. 1/2onion, minced
  4. 1 1/2 tspDijon mustard
  5. 2 clovesgarlic, minced
  6. 6 ozcream cheese at room temperature
  7. 2 tbspchives, minced
  8. 1 1/2 tspWorcestershire
  9. 12 slicesthin cut bacon (or 16 if your chicken breasts are large)

Cooking Instructions

    Preheat oven to 375 degrees.

    In small skillet, cook onion in olive oil until golden brown. Add garlic and cook until fragrant, about 30 seconds. Remove from heat.

    In small bowl, mix cream cheese, Worcestershire, mustard, chives, and onion mixture. Season with salt and pepper to taste.

    Split chicken breasts along thick side, not cutting all the way through. Spread the cream cheese mixture on one side of each open breast. Fold to close. Lay out 3-4 slices of bacon side by side. Place a chicken breast on the bacon with the cut side 2” from the end of the bacon. Tuck the bacon ends into the split in the chicken, then roll the chicken to wrap the bacon around it. Place the bacon wrapped breast seam side down on a rack in a rimmed baking sheet. Repeat with remaining breasts.

    Bake for 35 mins. Increase heat to broil, and cook an additional 5 minutes to crisp the bacon. Watch carefully to prevent burning. Remove from oven, turn the chicken over, and return to broiler to crisp the bacon on the bottom (this took me about 7 mins but watch carefully). Serve and enjoy!
