White Bitter Gourd or Karela is a simple yet a flavourful Vegetable much similar to it's Green counterpart. It is also called as Balsam Pear and is a tropical vine that produces tasty Vegetables. The White variety is much better than Green variety and is less bitter. Hence these are happily eaten by everyone.
White Karela has a unique flavour profile. It contains Iron, Calcium, Potassium and Beta-carotene. It can be used in Curries, Stir Frys and also can be used to made a healthy and a wholesome Juice.
It promotes weight loss and also has anti cancer effects. It's rich in Vitamins, Minerals and antioxidants apart from many other benefits.
This is a simple Fry with just Onions and the White Bitter Gourd with a few everyday spices. It goes well alongside both Rice and Rotis. Also it gets done quickly too. The taste is also super delicious and less bitter. It's not at all bitter like the Green variety.

In a pan, heat some oil and add the ginger garlic paste. Fry it for a few seconds and then add in the asafoetida. Now add chopped or thinly sliced onions too. Saute these on a low heat until translucent and done. Add sliced white bitter gourd or karela.

Also add the powdered spices as mentioned. Mix well. Cover and cook on a low flame for 18-20 minutes. It's done in just about 20 minutes or so since the slices are thin and fresh.

Do not over cook it and retain it's crunch. Adjust salt as needed. Bitter gourd gets done quickly. It doesn't take much time. There is no need to add water as well. It gets done in it's own juices. Just remember to cover it while cooking in order to not let the steam escape. After the stipulated time, open the lid and roast it to perfection. Do it on a medium high heat only and do not burn it. It becomes crisp in texture.
