Spiny gourd is a seasonal recipe , it is available in rainy season only. Very nutritious and must eat in rainy season . It improves immunity and hence helps to get rid of many diseases.
Steps

First wash spiny gourd in luck warm water, add turmeric powder in the water to remove dust and dirt.

Then cut the spiny gourd and remove seeds. Now heat a pan and add oil.once heated add cumin seeds, as they splutter add asafoetida. Ginger - green chilli paste (coarsely grind),turmeric powder and saute it.

Now add spiny gourd and salt again mix it well so that all ingredients get mix with the pieces of spiny gourd.

Cover the pan and let it cook. Once it becomes soft add coriander powder, fennel seeds powder and amchur powder. Mix well and let it cook further for 5 to 6 minutes.

Check whether it is cooked,then turn off flame and serve it.
