Scallop and Seafood Steamed Egg_Cooker Recipe

Eggs are a staple ingredient at home, and silky steamed eggs are a favorite of children. By adding some ingredients, the simple steamed egg can transform into a dish fit for guests. I like to use a Tatung electric cooker to steam eggs. By mastering three details—sifting, covering, and leaving a gap—you can achieve smooth steamed eggs without holes every time. The silky steamed egg, delicious seafood, and sweet scallop shreds are incredibly tasty♪

TIPS
1. Use room temperature eggs. If using refrigerated eggs, let them come to room temperature before using.
2. Steamed egg ratio: [egg: water = 1 egg: 100ml].
3. Gently beat the eggs and mix with the scallop soaking water to reduce air bubbles that cause holes in the steamed egg.
4. Use cooked ingredients (cooked chicken, cooked shrimp) in the egg mixture to ensure the filling is cooked when the steamed egg is done.
5. Cover the container with a small plate or heat-resistant foil.
6. The material of the container (ceramic, stainless steel) and the height of the egg mixture in the container will affect the steaming time.
7. Use a chopstick to poke the center of the steamed egg; if it is set, it is done.

Ingredients

  1. 2room temperature eggs
  2. 15 gshredded dried scallops
  3. 200 mlwater
  4. 1/2 teaspoonsalt
  5. [Topping]
  6. 2white shrimp
  7. 2cooked scallops
  8. 1imitation crab stick

Steps

  1. 1

    Prepare all ingredients. Soak the shredded scallops in [water amount] for 30 minutes to soften, and reserve the [scallop soaking water]. Steam the softened shredded scallops in the electric cooker (outer pot) with water up to the 2-cup mark. Peel and devein the shrimp, leaving the tail, and cut the imitation crab stick into 6 pieces.

    Beat the eggs into a liquid, then slowly pour into the [scallop soaking water] and mix well. Next, strain through a [sieve] 2-3 times to remove egg strands and large particles. 🔖 Secret to silky steamed eggs

    Slowly pour the egg mixture into a container, adding some shredded scallops (reserve some for topping). If there are small bubbles on the surface of the egg mixture, remove them with a small spoon, and cover the container to prevent steam from dripping and causing holes in the steamed egg. 🔖 Secret to a smooth surface

    Take out the electric cooker, and place a chopstick on the edge as shown to cool. (Outer pot) Pour water up to the 8-cup mark, and press the switch to start steaming. (Takes about 15 minutes)

    When the switch pops up for the first time, lift the lid to the side and carefully remove the container cover (be careful of the heat).

    Place the [topping] ingredients on top, no need to cover the container again, but leave a gap with a chopstick on the edge. (Outer pot) Pour water up to the 2-cup mark, and press the switch to steam. (Takes about 5 minutes)
