Steps

Wash baingan, remove stem,slit, and keep in water so can't get brown.

In a mixer jar add onion, garlic cloves, ginger, dry coconut, coriander leaves, coriander seeds and grind coarsely.

Heat oil in a pan add masala and saute..Add turmeric, chilli, garam masala and salt.Stir till oil separates.

Add required water and cover for seven minutes.Once baingan cooked and tender turn off the gas.

Decorate with fresh coriander leaves and serve with chapati or bhakri.
