Heat the oven to 180 degrees

Heat 2 tbsp of oil in a frying pan and add the chopped onion - fry slowly until the onion becomes transparent then crush the garlic and add to the pan and continue frying until the onion turns golden

Prepare the artichokes by peeling them and removing the rough outer leaves then cut each heart into approx 6 pieces

Place the pieces of artichoke in a pan with 2 tbsp oil and cook slowly over a low heat (you need to cover the pan at this stage) - turn the artichoke pieces once to ensure that they are well cooked (you can save time by using ready prepared artichoke hearts - either from a jar or frozen)

Beat the eggs in a bowl then add the cooked onion, artichoke pieces and 50g grated parmesan - mix everything together well

Grease a medium sized baking dish with a few drops of olive oil and then pour the mixture into it - cover with the bread crumbs and then sprinkle the rest of the grated parmesan on top

Cook in a pre-heated oven for 25 - 30 mins or until the top has turned golden

This dish can be eaten hot or cold
