Ingredients

2hours 30minutes
4 servings
  1. 2lamb shanks
  2. 3 cupsrice, washed, soaked 20 minutes, drained
  3. 1onion, sliced
  4. 4 clovesgarlic
  5. 1 tbsp.coriander seeds
  6. 1 tbsp.tomatoes paste
  7. 3 tsp.cumin seeds
  8. 3green cardamoms
  9. 1 tsp.turmeric
  10. 1 tsp.chilli powder
  11. 1/2 tsp.pepper powder
  12. 1cinnamon stick
  13. To taste, salt
  14. 5cloves
  15. 8pepper corns
  16. 2 cupsbeef stock
  17. 3 cupswater
  18. As required, water
  19. 1/2 cupcarrot, julienned
  20. 1/4 cupraisins
  21. 1 tbsp.brown sugar
  22. 1/4 cupoil
  23. 1 tbspghee

Steps

2hours 30minutes
  1. 1

    Heat Oil in a pan and add the lamb shanks.

  2. 2

    Sear from both sides until lightly brown. Remove.

  3. 3

    In same oil fry onions until soft.

  4. 4

    Add garlic. Fry for a minute.

  5. 5

    Add tomato paste and all the spices and mix. Cook for 1-2 minutes.

  6. 6

    Return shanks back to the pot.

  7. 7

    Add beef stock and water. Cover and cook on slow heat for 2 hours, until meat is tender.

  8. 8

    Remove shanks and strain the stock.

  9. 9

    Add water in the pot with salt. Cover and boil the water.

  10. 10

    Add rice to boiling water. Cook till 60% done. Strain.

  11. 11

    In a pot layer the rice and pour stock over them. Cover and cook on low heat for 20 minutes.

  12. 12

    In a frying pan heat ghee and add carrots. Fry until soft.

  13. 13

    Add sugar to caramelize carrots.

  14. 14

    Add raisins and fry 1 minutes.

  15. 15

    Remove in sieve.

  16. 16

    Fluff rice and serve topped with lamb shanks and carrots-raisins around the shanks.
