Goji Berry Soup

An unusual soup containing goji berries which can be obtained from supermarkets dried, no need to soak. This recipe was created by Dale Pinnock (The Medicinal Chef)
It tastes delicious and is very nutritious. Serve with crusty bread or garlic bread.

An unusual soup containing goji berries which can be obtained from supermarkets dried, no need to soak. This recipe was created by Dale Pinnock (The Medicinal Chef)

Steps

Sauté the onion, chilli, ginger and garlic in a little olive oil along with a good pinch of sea salt, until the onion has softened.

Add the sweet potatoes, goji berries and mushrooms.

Cover with the stock and simmer until the sweet potatoes soften about 15 mins.

Blend into a thick soup adding boiled water out of the kettle if a thinner soup is required.

Serve sprinkled with Parmesan if desired and some crusty bread.
