Chicken Tortellini Bake

Wanted to make something simple but tasty for the family with stuff I had on hand in the fridge that needed to be used up. Everyone raved about this and I hope you'll enjoy it, too!
It's easy to add additional seasonings to taste, including red pepper flakes or cayenne (to taste) for a little heat.
Cook time includes 10 min prep time.

Preheat oven to 425°F. Use a nonstick 9x13 pan or spray a casserole dish with nonstick cooking spray.

Spread tortellini in any even layer in bottom of pan, top with an even layer of cubed raw chicken, and then sprinkle frozen spinach evenly over the top. Set aside.

Place all other ingredients in a large bowl and whisk to combine (don't forget the cornstarch, it's important). Pour evenly over the ingredients in the pan.

Cover lightly with foil and place in oven. Bake 20 minutes (it's not done yet, the chicken will still be raw in the middle). Remove from oven, stir gently and spread back out evenly, gently pressing down on the top. Sprinkle with additional grated Parmesan at this time of desired.

Return to oven uncovered and bake an additional 20-25 minutes or until the edges are bubbling and chicken is cooked through. When done, remove from oven and let sit 10-15 minutes before dishing up. Enjoy!
