Ingredients

  1. 2 cupsold-fashioned oats (about 180 grams)
  2. 1 1/2 cupsplant-based milk (about 350 ml, such as oat milk)
  3. 3/4 cupgrated carrot (about 80 grams)
  4. 2eggs
  5. 1/3 cupmaple syrup or agave syrup (about 110 grams)
  6. Cinnamon, to taste
  7. 1 teaspoonbaking powder
  8. 1/4 cupwalnuts (about 25 grams)

Steps

  1. 1

    Mix all the ingredients except the walnuts in a large bowl. Pour the batter into greased muffin tins or cupcake liners.

    Preheat the air fryer for 5 minutes at 340°F (170°C). Top the muffins with walnuts.

    Bake for about 15 minutes or until a toothpick inserted in the center comes out clean.

    Brush the muffins with agave syrup before serving.
