Gujarati Patra Recipe or Alu Vadi Recipe is colocasia leaf recipe where the leaves are smeared with sweet, spicy, tangy besan paste then steamed and later added to a aromatic and flavourful tempering. Serve these mouthwatering patras as an appetizer for your next party.

First of all, wash and clean the colocasia leaves and remove the veins. Separate the small and big leaves.

Now to make the batter in a big bowl, add gram flour, coriander cumin powder, turmeric powder, red chilli powder, asafoetida, garam masala, salt, ginger garlic, green chilli paste, lemon juice and sugar and little water. Mix better than adding.

Now, before applying the batter to the leaves, heat the water in the steamer. On a clean working surface, lay out the largest leaf (pointed side away from you) and spread the paste generously all over. Now place another leaf (pointed side towards you) on top of the first leaf and apply the paste generously all over.
Continue the process till you have used up all of the leaves. - 4
Now start rolling towards the centre, making sure each roll is tight and use the remaining paste to help stick the layers well together. After the last fold, use the paste to stick the open edge of the last roll and also add some to the sides. Oil the plate of your steamer and place this roll in for steaming for 18 to 20 minutes. Remove from steamer and allow it to cool. Once the roll cools cut it into thin slices.

Now heat oil in a pan for frying. Now add cumin seeds, mustard seeds, sweet curry leaves, finely chopped green chillies, sesame seeds, asafoetida and water and let it cook for a while. Now add Patra and toast untill crispy.

Now our colocasia leaves Patra is ready for serve. Take out to a serving plate and garnish top with coriander leaves and sprigs of grated fresh coconut.
