Sauté the sofrito, garlic, olive oil, onion, bell peppers, and celery for 2 minutes. Then add the tomato paste, ham, and chicken. Cook until the juices are released and the meat is sealed. (For a mirepoix, use 50% onion, 25% celery, and 25% carrot for any stew.)

Add the water or chicken broth. Bring to a boil, then add the potatoes and a dash of saffron or sazón with color (I used saffron, but just a dash since it's expensive).

Once boiling for 5 minutes, add the remaining ingredients and cook until the angel hair pasta is al dente.

For the final step, garnish and enjoy.
