This is my go-to comfort food whenever I need a pick-me-up. It takes a little time to make, but it's absolutely delicious!

Mash the boiled potatoes in a bowl. Mix well and let cool completely. Refrigerate overnight.

The next day, take the potatoes out of the fridge and mash them again. Add the egg yolks, salt, pepper, Parmesan cheese, and potato starch. Mix until well combined. Let rest for 5 minutes.

Cut the cheese into sticks. Beat the egg whites with a fork. Set out plates with flour and breadcrumbs. Take a small amount of potato mixture in your hand, place a piece of cheese in the center, and shape into croquettes. Roll each croquette in flour, then in the beaten egg white, and finally in breadcrumbs.

Shape all the croquettes. Fry them in hot oil until golden brown. Enjoy!
