First take the milk in a heavy bottomed kadhai. Bring to a boil. Now on medium slow gas continue boiling. Stir in between to avoid burning of milk at the base.Keep scraping the malai which sticks to the sides.

When 400 ml milk remains, add in the sugar and mix. Boil more for 3-4 minutes. Switch off gas and transfer the kheer to another bowl.

Cool until warm. Add in orange🟠 essence and colour and mix.

Cool completely, cover the kheer and keep in fridge for 4-5 hours. Keep the oranges🍊🍊 also in the fridge to chill. Before serving, peel the oranges.

Separate the thread-like fibres and seeds and separate the orange🟠 segments.

Note to take care that only these pulpy orange segments remain for use. Else the fibres and seeds make the kheer bitter. Chop the pistachios.

Now comes the best serving time. Before serving, add in the orange🟠 segments into the chilled kheer and mix gently. Add in the pistachios.

Garnish as desired and enjoy a KHATTI-MEETHI KHEER KOMOLA with a smile on faces of all family members.
