I added a few mint leaves also. Used additional spice such as fennel seeds.

Make a checklist, gather the necessary materials, keep them within reach

In a pan over medium heat, heat oil and fry the urad dal, chana, chilies, and fennel seeds Stir in asafetida. When aromatic remove from the stove Soak the fried stuff in water for 10-15 minutes.

Wash the leaves and drain the water. Blanch them to keep the color green. Soak the leaves for a few minutes in boiling water, remove with a slotted spoon to drain water, then plunge the leaves in ice cole water for a few minutes, Drain and In the same pan roast leaves in the oil over medium heat and fry until the raw smell goes away - 5 minutes. Add turmeric powder, ; Add salt. Remove from heat.

First, blend the soaked items, chillies, dal etc. in a blender. Add the mint, curry leaves, ginger and tamarind and blend.. A delicious thuvaiyal is ready.
Enjoy and serve -
Serve with rice, dosa, itali, or adai, uppuma. served with curd rice it tastes divine.
