Serves 6 servings
  • 2large eggplants
  • 2 cupsdiced tomatoes (from the garden, frozen last summer)
  • 12 ozsmoked pork belly (see tip in link)

  • 1 bunchfresh parsley (from the garden, see tip in link)

  • 6heaping tablespoons barbecue sauce (homemade recipe in link)
    Sauce barbecue aux tomates, oignons rouges et sirop d'érable
  • 7 ozcooked pork (leftover from a roast, recipe in link)
    Rouelle de porc au four sauce barbecue
  • 5 ozshredded Emmental cheese
  • 3/4 cupheavy cream
  • 3 tablespoonsunsalted butter (see tip in link)

    Wash the eggplants.

    Cut the eggplants into matchsticks using a mandoline (see tip in link) and thaw the tomatoes at room temperature.

    Peel the onion.

    Remove the rind from the bacon.

    Place the rind in a pot with the butter, melt over low heat, covered.

    Thinly slice the onion and add it, mix.

    Sauté the onion until golden, cut the pork belly into lardons.

    Add the lardons to the pot, increase to high heat.

    Brown them, then add the eggplants.

    Mix well, reduce to medium heat.

    Add the tomatoes, mix.

    Add the sauce, mix again.

    Season with salt and pepper, mix.

    Reduce to low heat, let simmer for 15 minutes.

    Cut the pork into cubes (see tip in link).

    Add the pork, rinse and dry the parsley.

    Chop the parsley (see tip in link) and add it to the pot.

    Mix, add the cream.

    Mix, add 2/3 of the Emmental, preheat the oven to 400°F.

    Mix, add the breadcrumbs.

    Mix, pour the mixture into a large gratin dish, smooth the top (see tip in link).

    Add the remaining cheese, drizzle with olive oil.

    Bake for 30 minutes, it's ready!

Tips

Comment utiliser la couenne de la poitrine de porc fumée

Je n’ achète jamais les lardons du commerce les faire soi même est tellement meilleur 😋 je découpe la couenne et la conserve pour cuire les pommes de terre sautées c est un régal

Comment avoir des herbes du jardin toute l'année

Je congèle persil, coriandre, menthe, basilic etc..dans des bacs à glaçons après les avoir hachés (sans rien ajouter)

Comment différencier facilement les beurres dans le réfrigérateur ?

Si comme moi nous n aimez pas conserver les beurres différents dans leur papier d emballage il suffit de coller des étiquettes sur les différents beurriers afin de ne commettre aucun impair en cuisine (je plastifie les étiquettes et elles supportent plusieurs lavages)

Comment doser facilement l huile d olive (arroser les salades,ajouter un filet d huile…)

Utiliser une verseuse conçue pour l huile d olive,j ai acheté la mienne en Espagne mais elles se trouvent facilement un peu partout

Comment éviter les coupures en utilisant une mandoline

Lorsque je dois couper des courgettes, aubergines etc le n enlève pas l extrémité après avoir lavé les légumes

Comment recycler les restes de plats cuisinés maison

Lorsque je cuisine un plat en quantité trop importante j utilise les restes pour confectionner un autre plat totalement différent en ajoutant d autres ingrédients et créer une nouvelle recette

Comment émincer finement et rapidement les fines herbes fraîches

Utiliser une paire de ciseaux à triple lames efficacité garantie

Comment étaler / égaliser facilement et uniformément des condiments etc

Je pose mes condiments en petits tas dans mon plat

Fan de cuisine j adore innover et créer de nouvelles recettes pour enchanter les papilles de mes proches j aime présenter joliment mes plats réjouir les yeux avant l estomac 😉Je n utilise pas de produits transformés pour mes recettes le fait maison est tellement meilleur 😋je prépare toujours à l avance mes bouillons et les congèle j en utilise beaucoup j adore les herbes fraîches et les épices j en mets partout j ai la chance d avoir un grand jardin avec des arbres fruitiers j ai donc des fruits toute l année ( merci le congélateur)Mon gros défaut : être incapable de suivre une recette ou d ouvrir un livre de cuisine 😂N'hésitez pas à me suivre sur Instagram pseudo :djem131> Portrait Cookpad : https://blog.cookpad.com/fr/mila-skull/
