Steps

Heat oil in a pan, add onions & saute till pink in colour. Add ginger, garlic & green chillies. Saute for 2 minutes.

Add tomatoes 🍅 & cook well for 3 minutes, stirring occasionally.

Add turmeric, red chilli & dried mango powders & 1/4 cup of water & mix well. Cook for 1 - 2 minutes, while stirring occasionally.

Add potatoes, coriander & 1/2 cup water & cook for 3 - 4 minutes. Stir occasionally. Cover & keep the vegetable aside till serving time.

Puris : Knead the dough with 1/2 tsp oil. Make 11 equal portions from the dough.

Roll each portion into a 3 inch diameter round. Heat the oil in a pan & deep fry these puris till they puff up very well. Drain the puris & remove them.

Serve Punjabi Aloo Subji with puris & pickle of your choice.

Note : This is an all - time favourite recipe which is made in every household with a little variation. Each house has its own speciality, this is our favourite.☺️☺️
