A simple yet a flavourful and a delicious side dish for mealtimes. It goes well with both Rotis and Rice. In this particular recipe of mine, I have used Green Brinjals or Eggplants. It turned out so very yum. Both Lunch and Dinner, this dish is super delicious. Everyone would love to dig in.
The best part is that it gets done easily. A much better choice for Lunchbox ideas too. A simple Salad with piping hot Bharwa Masala Baingan and homemade Rotis or Chapatis and even Parathas is a great option on any given day. The final look of the dish is also super tempting.

Steps

Wash and soak brinjals in salted water until use. Make + cut in each to facilitate stuffing.

Make a mix of the ingredients as mentioned under masala for the stuffing. Stuff each brinjal with it. Set aside.

Meanwhile heat mustard oil. Add cumin seeds and asafoetida. After a minute, add chopped onions. Saute until translucent. Also add ginger garlic paste and tomatoes too. Saute all of that with all the powdered spices added.

Cover and cook for about 6-7 minutes. Now add the stuffed brinjals or eggplants. Add some hot water. Cover again and cook on a low to medium high heat for the next 15-18 minutes or until done.

The delicious stuffed brinjals are ready with the masala. Garnish with freshly chopped coriander leaves. It goes well alongside both Rice and Rotis. Enjoy!
