Ingredients

20 minutes
4-6 people
  • Salad
  • 1 cupquinoa
  • 2 cupschopped and steamed broccoli 🥦
  • 1 cupcut asparagus
  • 1 cangarbanzo beans
  • Halfa white or a whole shallot
  • Parsley
  • Optional other add ins: chopped red pepper, carrot, apple, olives
  • Dressing
  • 2 tablespoonslemon juice
  • 2 tablespoonsapple cider vinegar
  • 1 tablespoonhoney
  • 2 tablespoonsmustard or dijon
  • Pepper

Steps

20 minutes
  1. 1

    Add 2 cups water and quinoa to a pan, cover, bring to a boil, reduce to simmer, let cook for 15 minutes or until all the water is gone, and fluff with a fork.

    Cut broccoli into small pieces, add to a bowl with a little water, cover,and microwave for 2-3 minutes or steam on the stove. Add to the quinoa in a big bowl.

    Sauté the asparagus or blanch it until it is bright green and soft. Add it to the salad with the drained garbanzo beans and chopped parsley.

  4. 4

    Mix all of the dressing ingredients in a separate bowl and add to the salad.

  5. 5

    Mix all together, cover, and place in refrigerator until it gets cold.

  6. 6

    Serve and enjoy!
