These are a simple but yummy and filling breakfast for busy mornings. They would also make a great snack or a healthy dessert. They are soft and chewy, more reminiscent of bread than a cookie. You could always substitute the nuts for dark chocolate chips, if you're feeling indulgent. Christina -

Simple PB Banana Oat Cookies Simple PB Banana Oat Cookies
Great for you have a ripe banana and you want something sweet. It’s insanely simple - just throwing together oats, almond butter, banana and chocolate chips. If only have one ripe banana or even a half- you can really just eyeball all the ingredients. The consistency won’t be like cookie dough before putting in tray - use a spoon and flatten with a spatula on top before putting in oven.Really good the next day too. KK Westhampton -

Okara and Banana Cookies, Version 2 Okara and Banana Cookies, Version 2
I wanted to make okara cookies that weren't soft. Please dry roast the okara while watching that it doesn't burn. It takes some time for the okara to get dry enough to produce crispy cookies. The texture of the dried okara should be like dry breadcrumbs.Add only enough banana to bring the okara together into a dough. If you add too much, the cookies won't be crispy.
