Collect the necessary materials. Place near the cooking area.

Stuffing: Take the stuffing ingredients-- baking soda, flours, 2tbsp oil in a bowl. Add all spice powders and mix with your fingers. Add coriander leaves, curry leaves, ginger, chopped chilies, onion, curry leaves and cilantro. Salt to taste. Add water little by little and mix. Make a thick paste.
Make a slit on the big chili, open with your fingers, using a small spoon or your fingers stuff the chili with 2tbsp stuffing. Bring the edges together to close.

Batter/slurry: Make a fairly thick slurry/batter in a bowl with slurry ingredients by adding water little by little. Dip the stuffed chili in the slurry. Let the batter cover the chili. Now you have three options: Deep frying 2) shallow frying or 3) cooking in a microwave

Deep frying: Do not fill your kadai or skillet with oil. take enough oil to cover the chilies. Heat oil over medim heat. Drop the coated chili in the hot oil. If the chili is not covered completely with the slurry, use a spoon coat the chili with the slurry/batter. Using a spoon, take oil, pour on the chili for uniform frying. keep turning chilies. When it turns golded brown remove, drain oil and place the fried chilies bajjies on a paper towel to remove the oil from the surface

.A paper towel will remove the oil from the top of the patties. Aromatic flavorful Nutritious fritters are ready. Transfer them to a serving plate ; serve with your favorite Chutney or Ketchup. Enjoy

Shallow frying use a shallow skillet. Take 1c of oil. Use medium heat. Arrange the batter coated stuffed chilies in the oil. Keep flipping to make sure all sides are uniformed fried and turn golden brown. Transfer them to a serving plate ; serve with your favorite Chutney or Ketchup. Enjoy

Cooking in a microwave: Places stuffed batter coated chilies on a microwave safe plate. Spray oul. Place in the microwave. Cook 30 sec pulses until the fried cilies are golden brown.

Tip: If you find it difficult to handle the big chilies, cut them into half after stuffing and then fry.
If you really do not want to handle big chilies. Just make thin slice and dip them in the batter and fry. Just enjoy the aromatic, spicy, flavorful bajjies wth your loved ones, friends, kids, siblings or spouse
