I used to cook this dish using Canned Soy Beans, that is commonly available in Japan, but it is impossible to find in Melbourne where I live. I started using Edamame as Edamame are young Soy Beans and they are almost the same thing, although Edamame are crunchy. In Melbourne, frozen Edamame beans that are already removed from pods are available from most supermarkets. This is a quick, easy, delicious and nutritious dish for you to try.

Ingredients

5 minutes
1 Serving
  • 100-125 gPork Mince *OR Chicken Mince
  • 1 pinchSalt
  • 1/2 tablespoonPotato Starch OR Corn Starch
  • 1Spring Onion *finely chopped
  • 1/2 cupEdamame Beans *thawed if frozen
  • 1 teaspoonOil
  • 1serving warm Cooked Rice
  • Sauce
  • 1/4-1/2 teaspoongrated Ginger OR Garlic *OR both
  • Chilli Flakes OR Chilli Sauce as required *optional
  • 1 tablespoonSoy Sauce
  • 1 tablespoonMirin
  • *Note: 1 tablespoon Mirin can be substituted with 1 teaspoon Sugar and 1 tablespoon Sake (Rice Wine) OR Water

Steps

5 minutes
  1. 1

    Combine all the Sauce ingredients In a small bowl. *Note: Mirin, a Japanese seasoning, can be described as very sweet Sake (Rice Wine). You can substitute with Sugar and Rice Wine (OR Water).

  2. 2

    Sprinkle Salt and Potato Starch over Pork Mince and combine. Prepare all ingredients before you start cooking.

  3. 3

    Heat Oil in a frying pan over medium high heat, cook Pork Mince and Spring Onion. When Pork Mince is cooked, add Edamame Beans and stir, add the Sauce, and stir to combine.

  4. 4

    Half fill a bowl with warm Cooked Rice, cover it with the mixture, and enjoy.

Hi Hiroko! If I made this in a large batch for meal prep, how long would it last in the fridge? I don’t want to make too much and it goes off haha
