Wash and hull the fresh strawberries. Pat them dry and thread them onto bamboo skewers.

In a pot, combine water and rock sugar. Heat until the mixture thickens. Do not stir; the rock sugar will melt as it heats. (Meanwhile, prepare a bowl of ice water. Use a spoon to drop some hot syrup into the ice water—if it hardens, it's ready.)

Dip the strawberries in the syrup, then immediately place them in the ice water to cool and set. Remove and enjoy your chilled strawberry candied skewers.
