Prepare the Parmesan crisps. Arrange grated Parmesan in a circle on parchment paper and cook in a pan until it starts to melt and change color. Place two of them over a bowl to shape them, leaving the other two flat.

Cook the asparagus in a saucepan over medium heat with a lid for 15-20 minutes, seasoning with salt and oil.

Poach the eggs: bring a small pot of water with a splash of vinegar to a gentle boil. Create a whirlpool and crack the egg into it. Cook for two minutes without moving it.

Prepare the Parmesan and pepper fondue: melt the cheese in a little milk, heat over high heat for a few minutes, let cool, and add pepper to taste.

Meanwhile, wilt the prosciutto in the microwave to make crispy flakes.

Arrange the asparagus on the Parmesan crisp, seasoning with the fondue and adding the prosciutto.

Place the poached egg in the Parmesan basket, garnishing with crispy prosciutto flakes and asparagus tips as desired.
