Triaca Sandwich

Back in my college days, I was part of a theater group (Triaca) where we held workshops and rehearsals in the auditorium of the M.A Caro residence hall. One afternoon in the cafeteria, I saw a student being served the classic pork loin and cheese sandwich, but she asked for it with sautéed onions, slightly caramelized. From then on, I started ordering it that way, and soon some friends did too—we called it a Triaca.

Sauté the onion until soft and slightly caramelized, then set aside.

Grill the pork loin cutlets. When you turn off the heat, place the cheese on top to melt.

Slice the loaf of bread.

Assemble the sandwich with the pork, cheese, and onions.

Serve.
