Everyone loves this pasta salad, and it's perfect as a side with meat dishes or even on its own for a light mini meal!

First, cook the pasta of your choice in salted water according to the package instructions.

Rinse the pasta with cold water and drain it well in a colander. Make sure to drain thoroughly, as water can get trapped inside the pasta. Place the pasta in a large bowl. Drizzle with olive oil and toss with a spoon.

If using frozen peas or corn, boil them briefly. Once cooked, rinse with cold water, drain, and set aside.

Add all the remaining ingredients: the corn (I used fresh), bell peppers, green onions, kasseri cheese (or substitute), ham (I used Spam), then add the peas, salt, and pepper.

Add the yogurt and mayonnaise. Mix everything very well.

Chill the pasta salad before serving.

You can serve it with chicken, but it also makes a complete mini meal on its own, perfect for any time and occasion.
