Ingredients

1-2 lblean ground beef (depends how meaty you like it)
1diced onion
1 packettaco seasoning
1 (10 oz)can of rotel
1 (10 oz)can of enchilada sauce
15 ozcan of corn
1 canblack beans rinsed and drained
1/2a brick of velveeta cheese cut into cubes
8 ouncesshredded of your choice, I used marble
30 ozbag of frozen tater tots

Cooking Instructions

Brown ground beef with onion.

Drain excess fat.

Add taco seasoning, rotel, enchilada sauce and mix.

Stir in the cubed velveeta.

Once velveeta is melted add in the black beans and corn. Give it a quick stir.

Add mixture into a greased 9x13 baking dish.

Top with shredded cheese and then the tater tots.

Bake it in the oven at 400 for about 20-30 mins or until the tots are nice and crispy.

And voila! Add your favourite toppings. I like topping it with sour cream and hot sauce. Enjoy!
