Taco tater tot casserole

Ingredients

  1. 1-2 lblean ground beef (depends how meaty you like it)
  2. 1diced onion
  3. 1 packettaco seasoning
  4. 1 (10 oz)can of rotel
  5. 1 (10 oz)can of enchilada sauce
  6. 15 ozcan of corn
  7. 1 canblack beans rinsed and drained
  8. 1/2a brick of velveeta cheese cut into cubes
  9. 8 ouncesshredded of your choice, I used marble
  10. 30 ozbag of frozen tater tots

Cooking Instructions

    Brown ground beef with onion.

  2. 2

    Drain excess fat.

  3. 3

    Add taco seasoning, rotel, enchilada sauce and mix.

  4. 4

    Stir in the cubed velveeta.

  5. 5

    Once velveeta is melted add in the black beans and corn. Give it a quick stir.

    Add mixture into a greased 9x13 baking dish.

    Top with shredded cheese and then the tater tots.

    Bake it in the oven at 400 for about 20-30 mins or until the tots are nice and crispy.

    And voila! Add your favourite toppings. I like topping it with sour cream and hot sauce. Enjoy!
