    First, place 1 cup chickpea flour in a bowl. Add 1 teaspoon red chili powder, salt to taste, 1/2 teaspoon turmeric powder, carom seeds, dried fenugreek leaves, and 1 teaspoon oil. Mix well, then add water as needed to knead into a dough for the gatta.

    Shape the dough into rolls as shown, and set aside. Rinse the rice thoroughly and soak in water for 15 minutes.

    Meanwhile, chop the onions, green chilies, ginger, and vegetables.

    Boil the rolled gatta in 1 cup hot water with 1/2 teaspoon oil. Once cooked, remove and cut into small pieces. Heat 2 tablespoons oil in a large pan.

    Add the bay leaf, cloves, black cardamom, cumin seeds, and mustard seeds. Then add the chopped onions, green chilies, and finely chopped ginger. Sauté until fragrant.

    Add the chopped potato and other vegetables. Mix well, then add the soaked rice. Stir in turmeric powder, garam masala powder, and salt to taste.

    Add red chili powder, dried fenugreek leaves, and 2 cups hot water. Add the boiled gatta pieces and cook everything together.
