I found this couscous mix at my local supermarket and I decided to add a few veggies to make it more flavorful and nutritious. It’s easily made under 15 minutes!

NOTES:
* You can substitute the Health Grains Couscous Mix for any other couscous. The couscous- water ratio is 1:1

Ingredients

3 servings
  1. 1 packHealth Grains Couscous Mix*
  2. 1/3 cupCarrots (diced)
  3. 1/3 cupFrozen peas
  4. 1/3 cupRed bell pepper (diced)
  5. 2 tbspExtra virgin olive oil
  6. 1 1/4 cupwater*

Cooking Instructions

13 minutes
  1. 1

    Assemble all ingredients.

    Heat oil in a pan over medium heat and add carrots. Sauté for 2-3 minutes, mixing often.

  3. 3

    Add red bell pepper and cook for 5 minutes, covered. Mix occasionally.

  4. 4

    Add 1 1/4 cups of water and bring to a boil.

  5. 5

    Turn off heat, add couscous and green peas and cover. Let it sit for 5 minutes.

  6. 6

    Fluff couscous with a fork and serve warm!
