Moringa Tree or drum stick tree is also known as a Miracle Tree. Every part of this Tree including Leaves, flowers, roots is beneficial. They are highly nutritious, promotes good health and prevent diseases. These Leaves are good option for Vegetarians or Vegans. Used in various culinary dishes, curries, paranthas, teas and many more. They are worthy additions to your diet either consumed fresh, dried or in a powdered form. So, I chose drum stick leaves to prepare deep fried fritters, made simply by adding them in spiced Gram Flour batter, and then deep fried. They turned out nice. So, give it a try and you will love it.

Ingredients

Prep time 15 minutes, Cook time - 15 minutes
2 to 3 people
  • 1and 1/2 cup Gram Flour
  • 1/2 cupRice Flour
  • 1 cupDrum Stick Leaves,1 Bunch
  • 1Onion, finely chopped
  • 1/2 teaspoonBlack pepper powder
  • 1/4 teaspoonTurmeric powder
  • 1/2 teaspoonRed Chilli Flakes
  • 1and 1/2 teaspoon Salt or as per taste
  • 1/2 cupto 1 cup Water or as required
  • 2 CupsOil or as required for deep fry
  • For Garnishing (optional)
  • 5-6Drumstick Leaves
  • 1/4 teaspoonWhite Sauce

Steps

Prep time 15 minutes, Cook time - 15 minutes

    Take 1 bunch of Drum Stick Leaves and separate the Leaves from the stems.

    Roughly Chop all the leaves. Wash thoroughly with water.

    Take all ingredients together to make fritters. In a mixing bowl, add 1 and 1/2 cup Gram Flour, 1/2 cup Rice flour.

    Add 1 cup Moringa leaves, 1 chopped onion, 1/4 teaspoon black pepper, 1/2 teaspoon chilli flakes, 1/4 teaspoon Turmeric powder, 1 teaspoon to 1/2 teaspoon salt. Mix well.

    Add water gradually. Mix and prepare a batter, neither too thick nor too thin.

    Heat Oil in a wok to deep fry the fritters. Slightly dab your hands with oil, take 1 small portion of the batter in your hands and flatten it by slightly pressing it to form in a round shape. Drop the fritters in oil and deep fry by flipping from both sides on medium to high flame.

    Once they turn golden brown, take them out on an absorbent tissue paper to soak excess oil.

    Note - If you fry the fritters in an extremely heated oil, they seemed cooked instantly but remained uncooked from inside.

    Also, you can add more veggies/spices like black salt or chat masala as per your preference.
