Ingredients

two people
  1. Crispy Dough
  2. 100gcake flour
  3. 1 pinch(about 1g) using three fingers salt
  4. 50 cclukewarm water
  5. 2 teaspoonsolive oil
  6. Pizza Sauce
  7. 1 tablespoonfermented rice from funazushi (fermented crucian carp sushi)
  8. 1 tablespoontomato sauce
  9. 1/2 teaspoonpickled plum paste (umeboshi)
  10. 2 teaspoonsolive oil (for coating)
  11. 1asparagus stalk
  12. 20chickpeas
  13. 2 teaspoonsolive oil(for sautéing)
  14. 4 slicesfunazushi fille
  15. 30 ggouda cheese
  16. 10 gparmigiano-reggiano
  17. Topping
  18. 2 sprigswild arugula (Selvatico)
  19. 2green cherry tomatoes
  20. 1salted green chili pepper
  21. 1radish

Cooking Instructions

    In a bowl, mix cake flour, salt, and olive oil. Gradually add lukewarm water while mixing. Knead the dough well until it becomes smooth.

    Divide the dough into two portions, wrap them in plastic wrap, and let them rest at room temperature for 20 minutes.

    Lightly flour a surface and roll out the dough into a round shape using a rolling pin.

    Brush olive oil onto the pizza dough.
    Combine the ingredients for the pizza sauce and mix well, then strain it using a tea strainer. Thinly spread the sauce onto the pizza dough.

    Cut the asparagus in half lengthwise and crosswise, then sauté it together with the chickpeas.

    Place slices of funazushi, asparagus, and chickpeas on the pizza dough, then top with Gouda cheese and sprinkle with Parmigiano-Reggiano.

    Preheat the oven to 230°C and bake for about 7 minutes until nicely browned.

    Top the baked pizza with torn wild arugula, thinly sliced green cherry tomatoes, salt-pickled green chili peppers cut with scissors, and crisp radish halves that have been soaked in cold water.
