Miso Daikon & Pork Rice Bowl

Daikon and Pork are a great combination, and I often cook them together. I most likely use Soy Sauce, Sugar and Mirin to season them, but Miso is also good. Today I cooked just 1 serving for my lunch and made it into a rice bowl as I always eat it with rice. To cook Daikon quickly, you need to cut it into thin slices.

Peel Daikon, cut in half or quarters lengthways, and cut into 1-2mm thin slices. Prepare all other ingredients.

Heat Sesame Oil in a frying pan over medium heat, cook Pork, Daikon and Garlic for a few minutes. Add Chilli Flakes, Sake (Rice Wine), Water, Sugar and Miso, stir to combine. Alter the amount of Miso and Sugar to suit your taste, but be aware Miso can be very salty.

Cover with a lid and cook until Daikon is soft and the sauce is thick. If the sauce is thick but Daikon is not yet soft, add extra Water and cook until Daikon is soft.

Half fill a bowl with warm Cooked Rice and cover it with the Daikon and Pork mixture, add some finely chopped Spring Onion on top, and enjoy.
