Heat oil in a pan and add the diced potatoes. Saute for 2-3 minutes.

Add ½ tsp salt and continue to saute the potatoes on medium heat. Cover with a lid for two minutes. Cook until they begin to colorize.

Add the chopped onions and saute until translucent.

Next, add in the chopped tomatoes and saute.

Add black pepper powder. Mix well. Lower the heat and cover for a few minutes until the tomatoes are tender. Check the salt and add more if required.

Spread out the mixture evenly. Add the eggs and green chillies. Sprinkle some salt and pepper over the eggs. Cover and cook until the eggs are done as per your choice (runny or well done).

To finish, garnish with chopped green coriander leaves.

The Afghani Omelette is ready to enjoy. Serve hot with flatbreads.
