Sheet pan kabab

Sheet pan kabab served with pita bread is a quick, flavourful meal perfect for busy weeknights.
Juicy ground meat mixed with spices, herbs, and is shaped into kababs and baked on a single sheet pan—no grill required!
Roasted vegetables like bell peppers, tomatoes, and onions can be added for extra flavour and color.
Serve the kababs hot with warm pita bread, fresh salad, and a side of yogurt or tahini sauce. I served it with onion-cucumber salad in sumac and green chutney.

Mix ground beef with all spices and ginger-garlic paste. Mix well and knead.

Marinate for 2 hours in fridge.

Preheat oven 480F/250C.

Add cilantro and green chillies to the mixture and mix well.

Transfer the mixture to an oven safe dish or sheet pan and flatten evenly.

Divide into 6 portions and mark impressions. Brush with oil and bake for 20 minutes.

In a bowl add the onion and cucumber and mix well.

Add vinegar and sumac and mix.

In a small bowl mix together olive oil, tomato paste, hot sauce and brush the top of the kababs.

Broil for 5 minutes or until golden.

Remove and rest.

Place a kabab on pita and add the onion-cucumber salad. Drizzle with green chutney and serve.
