Budget Meal: Omelette Curry

Omelette curry is a comforting dish that I have grown up with. We used to make it at least once a week. This dish combines velvety omelette with aromatic, flavorful curry.
It’s a quick weeknight dinner with minimal ingredients. If you have two eggs at home, you can turn it into a delicious curry for two!
This is also a very budget friendly meal. 😊
Budget Meal: Omelette Curry
Omelette curry is a comforting dish that I have grown up with. We used to make it at least once a week. This dish combines velvety omelette with aromatic, flavorful curry.
It’s a quick weeknight dinner with minimal ingredients. If you have two eggs at home, you can turn it into a delicious curry for two!
This is also a very budget friendly meal. 😊
Cooking Instructions

Beat the eggs, add one of the chopped onion, and green chilis if using, with a pinch of salt. Heat oil in a pan and make an omelette. Keep aside.

Now let’s make the sauce for the omelette curry. In a blender or food processor add the other onion, tomato and minced ginger and garlic. Blend to a smooth paste.

Heat oil in a pan and add this blended masala. Saute for two minutes on medium low heat.

Now add the salt, turmeric powder, chili powder if using, coriander powder, and sauté the spices with the onion – tomato mixture for 2 to 3 minutes on medium till the masala starts leaving the sides of the pan and you see the oil “separating.”

Now add the water and stir gently till the masala is well incorporated. Bring to a boil.

Cut the omelette into pieces and add to the curry.

Cover the pan, lower the heat and cook for about three to four minutes.

Now open the lid add the garam masala and stir very gently, so the omelette pieces don’t break and then switch off the heat and garnish with cilantro before serving. I like to pair this curry with rice.
