Salad with parmesan cheese and croutons and Caesar salad dressing: quick and delicious. The special element in Caesar salad is that it is prepared in restaurants table side.

At home, I make the ceasar sauce with one egg and then make a separate whipped egg, lemon juice and Homemade Worcester sauce and add that table side for guests.

This recipe is for dinner table side preparation for two people. I sometimes add optional ingredients of grilled chopped bacon and chopped mild jalapeño, poblano or Anaheim pepper pieces.

  1. 1whole shredded Romaine or iceberg lettuce, washed thoroughly
  2. 2 TspParmesan Cheese, crumbled
  3. 1 slicesour dough bread to make croutons
  4. 1mild fresh green pepper, chopped
  5. For the dressing:
  6. 1Mozambi Lime pressed for juice
  7. 1/2meyer lemon for extra dressing juice
  8. 1 TbsOlive oil
  9. 2fresh farm eggs
  10. 2 TspWorchester sauce
  11. 1 TbsAnchovy paste, Spanish
  12. 2 Tspgranulated Garlic
  13. 2 TspDijon mustard
  14. 2 pinchesBlack pepper
  15. Optional:
  16. 1 Tbschopped mild green pepper
  17. 1 stripGrilled bacon, chopped

Steps

Few Minutes
  1. 1

    Prepare table side solid dishes : chopped romaine lettuce ingredients: chop mild green pepper, shred romaine lettuce, sprinkle parmesan cheese on top.

    Prepare ceasar salad dressing liquid ingredients with Spanish anchovy paste or mash two canned anchovies with a fork.

    Add Worcester sauce, egg, mustard, lime juice, olive oil, garlic, salt, pepper, and Parmesan grated cheese. Drizzle over.

    Whisk farm egg with juice of half a lemon and Tsp Worcester sauce and drizzle over. This makes the ceasar salad creamier.

    Make the croutons in skillet with a dried red pepper, grill one bacon slice, crumble.

I got certified by the University of California Master Gardener Program in 2005. I try to bring out the original flavor of ingredients, then add layers of spices, herbs and flavorings that enhance, not distort the taste.
