A twist to the normal recipe brings larger smiles on the face of whoever eats it.
I made this recipe on the occasion of my Marriage Anniversary.
Steps

For Baked Katori: Knead dough. Rest for 10 minutes. Roll 8 thin round sheets. Lightly roast the sheets. Prick the sheets.

Grease steel katoris and arrange the lightly roasted sheets into them. Lightly brush oil on the arrangement.

Bake in a preheated oven. When crispy take them out and cool on a wire rack. Cool and store in an airtight container.

For Usad: Soak white vatana for 8-10 hours. Boil them with some salt and haldi. Keep aside. For Tempering: In oil, add rai, khada masalas and finely chopped green chilli, ginger and onions. Saute well. Add in tomatoes and cook well.

When oil separates add in salt and masalas. Cook well for 2-3 minutes.

Now, keep some of this onion-tomato chopped masala aside to make tari. Now add in boiled vatana and hot water and set the required consistency.

Add in sweet chutney and coriander and mint leaves. Switch off gas. Add lemon juice as required. For Tari:. Cook the kept aside chop masala with some oil and more salt, chilli powder and garam masala.

This tari adds the actual taste to the recipe. Switch off when the oil separates.

Now keep all the components ready-Usad, tari and chat ingredients. Assemble just before serving.

Into the Baked Katoris,fill usad, chutneys, onion, tomato, chutneys into the baked katori. Add in the most important taste-maker-Tari.

Top with mixture, masala singh, coriander and pomegranate pearls. I served this USAD KATORI CHAT WITH MANGO-MALAI KULFI.
