Chop Suey is a dish from American Chinese cuisine and from other forms of overseas Chinese cuisine generally consisting of meat, Eggs and quickly cooked with Vegetables like Cabbage, Celery, Bean sprouts, Water Chestnuts etc. Vegetables can be added according to availability and choice. Meat usually would be Beef, Shrimps, Chicken, Fish etc. This one here is purely a Vegetarian version by me. And this is just as amazing.

Chop Suey is a Chinese style dish usually done with the leftovers and is a perfectly stewed up dish consisting of meat with Vegetables. Chop Suey is a brilliant one to use up leftover Chicken. It has a thick sauce and then served with either Rice or Noodles, although Rice is the most common. American Chop Suey is basically fried Noodles topped with an assortment of Vegetables cooked along with meat. It's a great meal in itself but is also served as a starter alongside other entrees too. It has been popular all over the World, in areas heavily populated by the Chinese immigrants.
A simple stir fry of Vegetables cooked with meat in a thick sauce and served on top of fried Noodles is Chop Suey. The only time taken is in prepping up the Vegetables. Once it is taken care of, the entire dish comes together in less than 30 minutes. Let's get started then.

Ingredients

25-30 minutes
4 servings
  1. 250 gmHakka Noodles
  2. 1 tspSalt
  3. 1 tspOil
  4. For fried Noodles -
  5. 1-2 tbspCornflour
  6. 2-3 cupsOil
  7. American Chop Suey Sauce -
  8. 1-2 tbspOil
  9. 1 tspchopped Garlic
  10. 1 tspchopped Ginger
  11. 1/2 cupfinely chopped Green Onions
  12. 1/2 cupfinely chopped Red Onion
  13. 1/2 cupshredded Cabbage
  14. 1/2 cupshredded Carrots
  15. 1Julienned Green Capsicum
  16. 1julienned Red Bell Pepper
  17. 1julienned Yellow Bell Pepper
  18. 1 cupcubed Baby Corn
  19. 2 tbspRed Chilli sauce
  20. 2 tbspSoy sauce
  21. 4 tbspTomato paste or Ketchup
  22. 1 tspBlack Pepper powder
  23. 1/2 tspSalt or to taste
  24. 2-3 tbspCornflour
  25. 1/2 cupwater
  26. 1 tspSugar
  27. For garnishing -
  28. 2-3 tbspchopped Spring Onions
  29. 1 tspLemon juice

Steps

25-30 minutes

    Boil noodles al dente with salt and oil added to the pot. My thumb rule is to boil the noodles 1 minute less than the package instructions. Drain them immediately and rinse with cold water.

    Once fully drained, spread them out on a parchment paper or a plate. Let them dry for a few minutes.

    After the stipulated time, sprinkle cornflour on the noodles and toss well. Deep fry on a medium high heat until crisp and brown. Drain them and set aside until use.

    Now for the sauce, heat oil in a pan. Add chopped garlic and ginger. Fry until fragrant. Also add green and red onions. Saute all of that for a while until translucent. Now add the rest of the vegetables. Stir fry them for a few minutes.

    After a few minutes of stir frying, add the tomato paste or ketchup, red chilli and soy sauces. Add sugar and black pepper too. Mix well. Next is to add the cornflour slurry. Mix until combined well. Simmer until the sauce thickens.

    Adjust salt. Add lemon juice and take it off the heat. Add this sauce on top of the fried noodles at the time of serving. Garnish with some finely chopped spring onion greens. Enjoy!
